Now before y’all think I’m talking about tofu, just calm down! I’m bringing you cornflake-crusted baked chicken. There’s no oil and it’s healthy, so you can save room for a slice of pie.
SERVES 4
2 cups crushed cornflakes
1 tablespoon garlic powder
1 tablespoon poultry seasoning
Salt and black pepper
4 large egg whites
4 boneless, skinless chicken breast halves
1. Preheat the oven to 375°F. Lightly grease a baking dish.
2. In a large bowl, combine the cornflakes, garlic powder, poultry seasoning, and salt and pepper to taste. Put the egg whites in a shallow bowl and whisk them lightly.
3. Coat each piece of chicken with the egg whites and then drag them through the cornflake mixture.
4. Put the chicken in the baking dish and bake until golden brown and cooked through, 25 to 30 minutes.
